Well, I’m still trying to get through the beets. Perhaps it’s too much of a good thing. I’ve never frozen cooked beets. I wonder how they turn out. Do they freeze well or are they like big, hard rocks? That may be a test for the next batch.
At any rate, I was making a sandwich and decided, “why not?”. So, I chopped up some beets to mix with my vegetables. I must admit that it doesn’t look very palatable. My initial thought was that this would make a really good sandwich for a Halloween. Finger food that looks like the fingers were bleeding (yeah, that’s gross).
It tasted good and that’s all that matters. Otherwise, I wouldn’t have eaten it.
