Beets Add Flavor and Color to Leftover Rice Pilaf

It was the fourth night of rice pilaf and I was getting kind of tired of it. Why didn’t I think to freeze some? I really wasn’t looking forward to eating it again. But, I hate throwing food out. It’s such a waste.

Earlier in the day, we boiled some baby beets. The smaller ones are so flavorful. They are bursting with it.

I decided to cut one up and mix it with my rice pilaf. It did add a different flavor to my dinner. This was like having a whole new dish which is better than what you find at the bottom of the bowl sometimes.

I’m not sure the color is all that appealing, though. It was an easy way to refresh leftovers.
