Every time we have a family get-together I have to bring my meal. The meals are geared toward the meat and dairy eaters. Oh, I can eat the salad and corn on the cob, but that’s really not a meal.
Today we celebrated our August birthdays. I had a couple of boxes of Near East Rice Pilaf. I made a box and mixed in two cups of chopped fresh asparagus. Simple, but tasty.
So, dinner was rice and asparagus pilaf, vegan pasta salad, grilled tofu, and watermelon. Plenty of food to keep me happy!
